Tomatoes are healthy as can be and rich in nutrients. Tomatoes are best when in season, as they are also lowest in price when in season. Fresh tomatoes of any variation are the best, however canned versions are very handy to have around for most dishes. Fresh tomatoes can be baked with fresh mozzarella. Tomatoes can be baked as a healthier version of “fried green tomatoes”. Tomatoes can also be eaten straight out of the garden.
Tomato and Mozzarella Salad

Ingredients
1 pound of big red tomatoes
2 oz of shredded 2% mozzarella cheese
2 t extra virgin olive oil
Freshly ground black pepper
6 leaves of fresh basil
Directions
Slice tomatoes into 1/2 inch thick slices.
Sprinkle mozzarella on top of each tomato.
Julianne basil, and sprinkle over mozzarella.
Sprinkle extra virgin olive oil lightly over basil.
Sprinkle pepper to taste.
